Hi!
Here at the Hoard Historical Museum in Fort Atkinson, we also have a small gift shop. What we've found that sells well is:
Unique locally-made items by artisans
Local interest items based on our area's history
Books for children
Children's presents-type items
What we've found is that people like to purchase items that can't be found elsewhere. So items that have a distinct local connection are perfect. For example, we work with a local soap producer to make lavender soap using the lavender from our garden. People really enjoy that it is something with a connection to us and that it is a practical gift.
Just a heads up: we've had many people tell us that because they liked a certain book, they documented the title and author name so they could find it "cheaper" on Amazon. No comment on that behavior :)

At Grant County Historical Society we are just beginning to develop our museum store. It will necessarily be small to begin.
What items or types of items sell well at your museum store?
Do people still like locally-made, hand-made things? Or T-shirts and mugs?
Books? Items for children?
Please advise!
