  I can scan about 1 page OK with the CZUR ET16 pro, but to do that I have to raise it high above the normal stand height -- on top of a box or something. And it is not wonderful, but does make readable images.
  I have also tried using a good digital camera on a tripod aimed at a bound volume of newspapers opened with double pages - leaning at an angle and the camera pointed at it. A good camera set at closeup and with decent lighting does a pretty good job of copying a large object. Lots of light, camera steady on a tripod, and shooting straight at the image.
  I suggest you try a camera and see if that works before buying a special scanner on a stand. Most of them are for copying smaller sized pages. I made a video of using the CZUR https://youtu.be/qPjm7TY5E_w
